I’m back! It’s 2015. In fact, it’s been 2015 for over 2 weeks! 2014 was a big year for me. I got married (to the best person I know), moved to California (which is gorgeous), and at the very end of the year, started this blog. I’m not sure what 2015 has brewing for me, and I have to be honest, I’m equal parts curious and anxious.
I’m not one for New Year resolutions, so don’t misunderstand this salad. I realize this is the first salad post on the blog, and I admit I am trying to undo some of the butter-sugar-fat filled holiday damage with more salad this January, but I do love a good salad. And this pretty citrus salad (which looks super impressive in person) is always a winner.
- 1 navel orange
- 1 red grapefruit
- 1 blood orange
- 2 tbsp pine nuts
- 2 tbsp pomegranate
- 1 small handful micro greens or arugula
- 1 tbsp olive oil
- ½ tbsp honey
- Freshly cracked black pepper
- Using a sharp knife, cut away the peel and white pith of each citrus fruit. Then slice into ½ inch disks. Arrange on a platter. Scatter over the pine nuts, pomegranate, and greens, season with pepper and drizzle over the olive oil and honey.
